Threebird Vinegar and Dressing
It took three generations of birds to bring you our vinegar and salad dressings. It began with Mary Francis Finch (my grandmother) who married B.S. Pidgeon. They then had my mother, Penny Pidgeon. I was born to Mike and Penny. My parents and I started Blue Heron Herbary in 1992.
Threebird Vinegar and Dressing was born when I came upon my grandmothers old spiral note pad that had all her recipes. At last I had her amazing French Salad Dressing instructions along with all her other coveted recipes! At one time, Grandma Pigeon had her own business called Pidgeon's Pantry, where she sold her vinegar and dressings.
It was time to bring back Pidgeon's Pantry - except there was one more bird to add - The Blue Heron of course. So, now three generations have come together to bring you Threebird Vinegar and Dressing.

Herbal vinegars may be used in place of vinegar in any recipe. They are especially good in salad dressings. They can also be used to flavor meats or fish, either marinate the meat in them or sprinkle the meat with the vinegar while cooking. Chicken or turkey marinated in lemon basil vinegar before grilling/broiling is tasty. Throw a splash or two of an herbal vinegar into any soup or tomato sauce you are making.
Herb infused vinegars are excellent flavor boosters. Try them as a seasoning for vegetables such as cabbage, green beans, cauliflower, and broccoli. A add a splash into your water as you steam your veggies. While sautéing your greens add a splash to brighten the flavor. Replace wine, fruit juice, plain vinegar, lemon or lime juice in recipes. Use in a salad dressing (one part vinegar to two or three parts olive oil, salt and pepper to taste).
